Adhering to this type of diet free of animal fats, oils and meats may seem difficult in a culture of meat driven fast food restaurants but with a health driven decision as a motivating factor one can implement this lifestyle successfully. Those with high cholesterol or heart disease particularly may want to look at choosing a whole food, plants-based diet. Dr. Esslystein, a doctor, who believes that the typical Americans diet is linked to heart disease and high cholesterol and demonstrated how one can benefit from a whole foods, plants-based diet
To summarize part of the book Dr. Esslystein began a study in 1985 with the goal of reducing his patient’s blood cholesterol levels to below 150 mg/dL. This goal would include using a minimal amount of cholesterol lowering medication and a low fat, plant-based diet. The 25 patients that had high cholesterol and a variety of life threatening coronary related diseases agreed to log what they consumed daily and avoided oils, meats, fish, fowl and most dairy. The results: Tthe 18 out of the 25 patients that adopted this lifestyle decreased the cholesterol from an average of 246 mg/dL to 132 mg/dL (Campbell & Campbell, p. 127). Those choosing to continue the plant-based diet have eliminated any additional heart related conditions as well.
After reading about the astounding results of Dr. Esslystein’s study one physician decided to adopt the whole foods, plants-based diet after suffering a heart attack. In thirty-two months of eating accordingly he was able to reverse his heart disease and lower his blood cholesterol to a healthy 89 mg/dL.
While implementing this alternative way of eating contrary to the “American diet” may take support and determination one can see that there are many health advantages according to the authors of The China Study and the healthy vegetarians out there.
Regardless of what you choose eating more plant-based, whole foods is advantageous for everyone!
